OORAH PIES - USMC FAVORITE 
I recently developed this recipe for the School Of Infantry at Camp Pendleton. I am a YMCA volunteer and when each company graduates the YMCA gives them a barbecue including hot dogs, chips and a homemade cookie. I would hear that the most popular flavor the Marines loved was chocolate and peanut butter so I took a traditional whoopie pie cake recipe and paired it with a peanut butter filling combo. They were and continue to be a instant hit. They fit all the marine criteria, size, lots of sugar and a fun shape they are not familiar with. They named them "OORAH Pies".

PIES:

1 cup shortening (Crisco)
2 cups sugar
1 cup buttermilk
2 tsp. vanilla
2 beaten eggs
4 cups all-purpose flour
1 cup cocoa
2 tsp. salt
2 tsp. baking soda
1 cup hot water

Cream shortening and sugar together until light and fluffy. Add buttermilk and vanilla. Add 2 beaten eggs to above mixture.

In another bowl sift flour, cocoa and salt together and add to buttermilk mixture (batter will be very stiff at this point). Dissolve 2 teaspoons baking soda in 1 cup hot water and add slowly to batter.

Drop by rounded tablespoons onto ungreased cookie sheet. Bake at 400°F for 8 to 10 minutes or until they spring back lightly when touched in center. Remove and cool on rack.

PEANUT BUTTER FILLING:

1/2 cup (1 stick) butter, softened
1/2 (8 oz.) pkg. cream cheese, softened
3/4 cup smooth peanut butter
1 1/2 tsp. vanilla
2 cups sifted powdered sugar

Beat butter and cream cheese until light and fluffy. Add peanut butter and vanilla until mixture is smooth. Beat in powdered sugar until spreadable.

Place filling between two pies and wrap individually in plastic wrap. Can be frozen.

Makes about 2 dozen (3-inch) completed pies.
