CREAMED SPINACH 
1 lg. onion, chopped
2 (10 oz.) pkgs. chopped frozen spinach
Little butter
2 eggs
2 tbsp. flour
Water
Salt & pepper to taste

Saute onion in butter. Add frozen spinach and water to cover, cook until done. Add salt and pepper. Add eggs and stir. Sprinkle flour on top and stir until thickened.
