CARROT NUT MUFFINS | |
1 c. white sugar 3/4 c. oil 2 eggs 1 tsp. baking soda dissolved in 1 tbsp. warm water 1/2 tsp. salt 1 tsp. baking powder 1 tsp. vanilla 11/2 c. all purpose flour 1 c. walnuts 1 c. grated carrot Beat sugar, oil, and eggs. Add baking soda, water, and vanilla; mix. Add salt, baking powder, and flour. Mix and add grated carrot and nuts. Bake at 375 degrees for 15-20 minutes. Bake in well greased muffin tins. |
