SEAFOOD PASTA SALAD | |
4 1/2 c. water 1 1/2 lb. unpeeled, medium - size fresh shrimp 16 oz. pkg. linguine 6 oz. pkg. frozen snow peas, thawed and drained 6 green onions, chopped 4 med. tomatoes, peeled, chopped and drained 3/4 c. olive oil 1/4 c. chopped fresh parsley 1/3 c. wine vinegar 1 tsp. dried whole oregano 1 1/2 tsp. dried whole basil 1/2 tsp. garlic salt 1/2 tsp. coarsely ground black pepper Bring water to boil; add shrimp and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp, set aside. Cook linguine according to package directions, omitting salt; drain. Rinse with cold water; drain again. Combine shrimp and remaining ingredients; toss gently. Cover, chill at least 2 hours. Serves 10. |
