1 env. dry yeast 2 tbsp. warm water 2 eggs 1 tbsp. granulated sugar 1 c. milk, scalded and cooled 1/2 tsp. salt 2 c. all-purpose flour Oil for deep frying Powdered sugar In a small bowl stir yeast into water; let stand 3-4 minutes. In a large bowl, beat eggs and sugar until blended. Stir in milk, yeast mixture and salt, using a whisk. Beat in flour mixture until smooth. Cover bowl with a dry towel. Set in a warm place to rise until bubbly, 45-60 minutes. In a large skillet pour oil for deep frying 1 1/2-2 inches deep. Over medium heat bring oil to 375 degrees. Pour batter into a squeezable plastic bottle. Squeeze batter into hot oil, swirling in a circular design similar to a "bird's nest", 3-4 inches in diameter. Fry 1 minute on each side or until golden brown. Drain on paper towels. Dust with powdered sugar. Makes 15. |
