DE'S SICILIAN SHRIMP | |
3 lbs. shelled & cleaned shrimp 1 bottle catsup 1/4 c. good olive oil 1/2 - 3/4 onion, chopped 1 tsp. anise seed Grated Parmesan & Romano cheese Saute onion in olive oil along with the anise seed (really brings the flavor of the spice out, don't over cook or burn). Put shrimp in pot (Dutch oven, electric skillet or wok) and keep turning and stirring until shrimp has turned pink (a couple of minutes on medium heat). Pour catsup in. Use enough to more than cover shrimp and have extra sauce. Put in pepper if desired. Cover and simmer about five minutes or so to allow flavors to blend. Serve as a great appetizer with cheese sprinkled on top of mixed cheese in pot at end of cooking. Great with French or Italian bread and/or salad. Don't let the use of catsup put you off, it works get in this. |
