APPLE PANCAKE 
3 tbsp. sugar
1/4 c. flour
1 egg
2 tsp. vegetable oil
1/2 c. milk
1 tsp. cinnamon
1 apple peeled & cored, thinly sliced, or canned peaches are also great as a substitute
2 tbsp. butter

Saute apples (in oven proof frying pan) in butter. Beat egg (a whisk works best); add milk and oil; beat again. Add sugar; beat again. Slowly add flour and 1/2 teaspoon cinnamon; mix well. Pour batter over apples (or peaches) and cook over medium to medium-low heat until batter solidifies and is golden brown on bottom. (It helps to cover pan for this step.)

Remove from heat, sprinkle with brown sugar and remaining cinnamon; dot with remaining butter. Place under broiler until sugar melts and begins to bubble. Keep a close watch as it can burn quickly. Cut into wedges and serve.
