RECIPE COLLECTION
“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 (15 oz.) can whole kernel yellow corn, undrained
1 (15 oz.) can cream style yellow corn
1 (8 oz.) carton dairy sour cream
2 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn muffin mix
1/2 cup (1 stick) butter, melted

Mix all together and pour into large, lightly oiled casserole dish.

Bake at 350°F for 55 to 60 minutes.

My family just loves this recipe and always requests is when we get together! One thing I might add to the recipe about is that it fits into a 9" square or 7" x 11" pan. It is too thin and dry if baked in a larger one.

I put the leftover loaf in the fridge and the next morning turn it out of the dish, cut into 1-inch slices and fry it in butter until brown and crispy on both sides. With, or without, your favorite syrup, it is to die for.

I found this on Facebook one day. My wife said I should try to make it. I did, and now its on my Sunday and holiday menu as a mainstay. Quick to make, easy to cook, what more can a man ask for? I do add a couple of tablespoons of brown sugar though.
