TURNIP GREENS WITH CORNMEAL
DUMPLINGS
 
Turnip greens, washed well
Salt pork if desired (if not add oil; if cooked salt pork is sued taste before adding more salt)
1-2 tbsp. molasses

(Molasses helps to take out some of the bitterness.) Cook until tender. Add water as needed.

For dumplings, use 2 cups cornmeal, (water - ground, variety if available) 1 teaspoon salt, 1 tablespoon melted bacon drippings, and about a cup of boiling water (may be more). Shape into small pones. Drain the greens and add dumplings. Cover and cook about 20 minutes or until dumplings are done. The taste test is the most reliable.
