VEGETABLE SALAD WITH FETA CHEESE 
1 clove garlic, halved
1 head lettuce, torn in pieces
3 tomatoes, quartered
1 cucumber, peeled and sliced
1 red onion, sliced
3 celery stalks, diced
1 green pepper, chopped
6 radishes, sliced
1 carrot, shredded
2 tbsp. chopped parsley
1/2 c. olive oil
1/4 c. red wine vinegar
1 1/2 tbsp. fresh lemon juice
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 lb. feta cheese, crumbled
12-14 Kalamata olives

Rub interior of wooden salad bowl with garlic. Discard garlic. Add lettuce, tomatoes, cucumber, onion, celery, bell pepper, radishes, carrot and parsley to bowl. Toss lightly. combine olive oil, vinegar, lemon juice, oregano, salt, and pepper in jar with tightly fitting lid and shake well. Pour over salad and toss to coat. Add cheese and olives, and toss again.
