VEGETABLE PARMESAN | |
2 med. zucchini, about 1 lb., thinly sliced 6-8 mushrooms, sliced 1 green pepper, cut in strips 1/4 c. grated Parmesan cheese 1/2 tsp. basil 1 (15 1/2 oz.) jar spaghetti sauce 4 oz. shredded Mozzarella cheese Preheat oven to 400 degrees for 5 minutes. Spread zucchini, mushrooms and peppers evenly over bottom of 1 1/2 quart casserole. Sprinkle Parmesan cheese and basil over vegetables. Pour spaghetti sauce evenly over top. Cover loosely with aluminum foil and bake for 25 to 30 minutes. Remove foil, sprinkle Mozzarella cheese over surface, and return to oven. Bake, uncovered until cheese is lightly browned, about 3 minutes. Makes 4 (1 cup) servings. |
