BAKED ITALIAN CHICKEN | |
1 chicken, cut up, washed & thoroughly dried 1 lg. onion or 2 sm. diced fine 1 lg. pepper, thinly sliced 2 cloves garlic, diced fine 1/2 c. sherry wine 1 can of mushrooms 1 (8 oz.) can Hunts tomato sauce 1 lg. bay leaf, broken up 1/2 c. olive oil 1/8 tsp. oregano 1/4 tsp. basil or fresh basil leaves, chopped Salt & pepper to taste Preheat oven to 325 degrees. Place chicken in one layer in pan close together. Add all ingredients with oil being last on top of chicken. Bake and baste often until brown or until chicken is done. |
