BAKED LEMON PUDDING 
1 1/2 c. sugar
1/2 c. plain flour
1/2 tsp. baking powder
1/4 tsp. salt
3 eggs, separated
2 tsp. lemon rind
1/4 c. lemon juice
2 tbsp. butter, melted
1 1/2 c. milk

Sift 1 cup sugar with flour, baking powder and salt. Set aside. Beat egg whites until stiff, then beat in remaining 1/2 cup sugar a spoonful at a time. Set aside.

Without washing beaters, beat egg yolks until light; add lemon rind, juice, butter and milk. Stir yolk mixture into flour mixture and beat until smooth. Fold in whites until no white flecks are visible. Pour into a buttered 2 quart dish. Set in a pan of hot water 1/2 inch deep. Bake at 350 degrees for 45 minutes. Serve with whipped cream. Yield 6 servings.
