JIM'S GUACAMOLE 
6 avocados
1 1/2 tsp. salt
2 tsp. vinegar
2 tbsp. mayonnaise
1 tsp. oil
6 drops hot pepper sauce
1/2 sm. hot pepper, minced
1/2 c. finely chopped raw tomato
1/4 c. finely chopped onion
1/4 c. lemon juice

Remove skin and seeds of avocados. Place halves in bowl. Add salt, vinegar, mayonnaise, oil, hot pepper sauce, hot pepper, tomato and onion. Chop avocados until pieces are fine and seasonings well mixed.

Do not stir more than necessary or mash while mixing. Taste, add more salt and hot pepper sauce if needed. Makes 12 servings.
