HEARTY PEA SOUP 
1 onion, chopped
2 tbsp. oil
1 bay leaf
1 tsp. celery seed
1 c. green split peas
1/4 c. barley
1/2 c. lima beans
10 c. water
2 tsp. salt
Dash of pepper
1/2 tsp. basil
1/2 tsp. thyme
1 carrot, chopped
3 stalks celery, chopped
1/2 c. parsley, chopped
1 potato, diced

Saute onion in oil until soft, along with bay leaf and celery seed. Stir in barley, peas and lima beans. Add 10 cups water (cold) and bring to a boil. Cook on low heat about 1 hour and 20 minutes. Add salt, pepper, vegetables and herbs. Turn heat as low as possible and simmer about 30 to 40 minutes longer. Thin with additional water if necessary. Makes 8 to 9 cups.
