CREOLE PEA SOUP 
1/2 c. split peas
3 tbsp. butter
1 1/2 lbs. beef, cubed
1 onion, chopped
2 qts. water
1 carrot, diced
2 tsp. salt
1/4 tsp. pepper
2 sprigs parsley
1/2 tsp. thyme
1/8 tsp. nutmeg
2 white potatoes, peeled and cubed
2 sweet potatoes, peeled and cubed
1/2 c. chopped spinach

Wash peas and soak overnight in water to cover; drain well. Melt butter in large saucepan. Add beef cubes and onion; saute until brown. Add split peas, water, carrot, salt, pepper, parsley, thyme, and nutmeg. Cover and cook 1 hour. Add white and sweet potatoes and spinach. Cover and cook for 30 minutes or until beef and vegetables are tender. Enjoy.
