ZUC SOUP PUREE 
2 qts. chopped zucchini, with skin
1/2 c. chopped onion
1 can chicken (or beef) broth
1 can water
4 to 5 slices bacon, fried crisp
Salt & pepper to taste

Cook zucchini and onions in broth until tender. Puree mixture in blender, small amounts at a time. Stir in crumbled bacon bits or ham bits. Serve hot. Much like split pea soup, except less calories and not chalky.
