COLE SLAW 
1 head cabbage, shredded
2 carrots, shredded
1-2 green peppers, diced
1 onion, diced
1 tbsp. salt
1/2 c. red wine vinegar
1/2 c. salad oil
3/4 c. sugar
1 tsp. celery seed
1 tsp. mustard seed

Place all ingredients in a large bowl. Pour 1 1/2 cups boiling water over mixture, cover tightly and let sit 1 hour. Drain water off. Add wine vinegar, salad oil, sugar and seeds. Mix very well and serve or chill first. Lasts about 3 weeks.
