WESTERN BEAN SLAW 
1 sm. can Pinto beans drained
2 c. shredded cabbage
1/2 c. chopped celery
1/3 c. minced onion
2 tbsp. minced parsley
4 slices fried bacon, crumbled

DRESSING:

1 tbsp. red wine vinegar
1/2 c. salad dressing
2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper

In large bowl, combine beans, cabbage, celery, onion, parsley and bacon. Blend together dressing ingredients. Add to slaw mixture; toss lightly. Chill. Serve on lettuce cups, if desired. Serves 6 to 8.
