CRAB THERMIDOR | |
1 lb. crab or lobster meat 2 tbsp. butter 1/2 lb. mushrooms, sliced 1/4 c. butter 2 tbsp. flour 1 pt. Half & Half Salt and paprika or cayenne 1/3 to 1/2 c. sherry Serve Parmesan cheese, if desired Cook mushrooms and 2 tablespoons butter together 5 minutes. Melt 1/4 cup butter, add crab meat or lobster and cook 5 minutes. Sprinkle flour over crab meat. Stir until smooth. Gradually add Half & Half. Stir well. Heat slowly until smooth. Add the mushrooms. Season to taste with salt and paprika or cayenne and sherry. Serve with rice. Sprinkle with Parmesan cheese if desired. Serves 8. |
