SICILIAN MEAT ROLL 
2 beaten eggs
3/4 c. soft bread crumbs
1/2 c. tomato juice
2 tbsp. parsley
4 slices thin boiled ham
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
2 lb. ground beef
Shredded mozzarella cheese

Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic.

Stir in ground beef, mixing well. On waxed paper or foil pat meat to a 12 x 10 inch rectangle. Arrange ham slices atop meat, leaving a small margin around edges. Sprinkle shredded cheese over ham. Starting from the short end. Carefully roll up meat (jelly roll fashion) using waxed paper or foil to lift. Seal edges and ends.

Place roll seam side down in an iron skillet and bake at 350 degrees for 1 hour and 15 minutes or until done. Place wedges of cheese over top for 5 minutes longer to melt. (Meat will be pink in center because of the ham.)
