STREUSEL MUFFINS 
FOR MUFFIN MIX:

1 egg
3/4 c. milk
1/3 c. oil
1 3/4 c. all purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt

STREUSEL MIX:

1/2 c. chopped nuts
1/2 c. brown sugar
1 tsp. cinnamon
2 tbsp. melted butter

Grease or line 12 muffin cups with paper cup liners. In a bowl, slightly beat the egg; beat in milk and oil. Set aside. In a large bowl stir flour, sugar, baking powder and salt. Make a well in the center. Add the egg mixture all at once. Stir just until moistened. Do not over beat. Batter should be lumpy. Spoon into muffin cups, filling each 2/3 full. Top with streusel. Bake at 400 degrees for 20 to 25 minutes. Remove and serve warm.

Mix together in a bowl. OPTIONAL: Separate streusel mix in half. Put in the center of the muffins and rest on top.

I decided to make this into a cake, so I doubled the topping recipe and used cashews for the nuts, and I added 2 tbsp. Wilton's white sugar sprinkles. It's in the oven right now!

23 minutes later... They should bottle this scent and sell it. It's wonderful, it turned out perfectly fluffy and sweet. I am definitely going to use this recipe again.

Very easy and good recipe. My streusel did melt a little and run over, but I added a few tablespoons of flour to the mix and it worked great.
