JAMBALYA 
1/2 c. oil
1/2 c. flour
1/2 c. chopped celery
1/2 c. chopped onion
1 chopped bell pepper
1 sm. can tomatoes
2 cloves garlic, mashed
1 lb. shrimp, sausage, or chicken
3 c. cooked rice
Tabasco
Worcestershire sauce
Chicken broth
Salt
Cayenne pepper

Mix flour and oil in large iron skillet. Stir slowly over medium heat until dark brown. This takes a while (30-45 minutes). Add celery, onions, and peppers. Cook until tender.
