CARAMEL SWEET POTATO 
1 lg. or sm. can sweet potato
1 c. brown sugar
8 oz. carton heavy whipping cream
1 stick butter
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt

Cook sweet potato in juice for 10 minutes or until juice is medium thick. Add 1/2 butter. You may add caramel sauce to sweet potato and cook for 5 minutes. Or you can add sauce when served.

Caramel Sauce: In a small saucepan add brown sugar, heavy cream, 1/2 stick butter, cinnamon, nutmeg and salt; bring to a boil for 10 minutes.
