LITE SWEET POTATO PIE 
1 pkg. (8 oz.) cream cheese, softened
2 eggs, well beaten
3/4 c. sugar
2 prepared (9 inch) graham cracker pie crusts
2 pkg. (3 1/2 oz.) instant vanilla pudding mix
3/4 c. milk
2 c. peeled, cooked and mashed sweet potatoes (about 2 or 3)
1 1/2 c. Cool Whip
1/2 c. chopped nuts (optional)
Cinnamon to taste

Preheat oven to 350 degrees. Mix together cheese and eggs. Add sugar, cinnamon, beat until fluffy. Spread mixture in pie crusts and bake 20 minutes. Let cool. In large bowl, mix pudding mix and milk. Add sweet potato mixture and mix well; fold in Cool whip. Spread mixture in pie crust and garnish with nuts.
