HOT GERMAN POTATO SALAD 
4 med. potatoes

Wash and pierce potatoes through with fork. Place on paper towel and microwave at high (10) 10 to 12 minutes. Remove from oven, cool slightly, peel potatoes and cut in 1/8 inch slices.

In 2 quart casserole cut 6 strips bacon in small pieces. Cover with paper towel. Microwave at High (10) about 6 minutes, until crisp. With slotted spoon remove bacon to paper towels to drain. Set aside.

2 tbsp. flour
1 1/2 tsp. salt
1/8 tsp. pepper
1/2 c. vinegar
1/4 c. sugar
1/2 tsp. celery seed
1 c. water

Add water and vinegar to flour mixture. Microwave at High (10) 4 minutes, until mixture boils and thickens. Remove from oven and stir smooth. Add potatoes and bacon; stir gently so potatoes hold their shape. Cover casserole and let stand until ready to serve. Makes 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
