SWEET POTATOES WITH RAISINS AND
PECANS
 
5 sweet potatoes, peeled and cubed (or as half rounds)
2 oz. raisins
2 oz. chopped pecans
1/4 cup (1/2 stick) butter, melted
1/2 cup maple syrup
1/2 cup water

Preheat oven to 400°F (200°C).

Spread sweet potatoes in a single layer in a 9x13 inch baking dish. Sprinkle with raisins and chopped pecans.

In a small bowl, mix the butter, syrup and water. Pour the mixture over potatoes. Cover the baking dish with aluminum foil.

Bake at 400°F for 50 to 60 minutes or until sweet potatoes are tender. Remove foil during the last 10 minutes to allow sugars to caramelize.
