SWISS ARTICHOKE HEARTS 
2 pkgs. frozen artichoke hearts
3 tbsp. butter
1 med. onion, chopped
1 1/2 tbsp. flour
1 1/3 c. milk
3/4 tsp. oregano leaves
3 hard-cooked eggs, chopped
Salt & pepper
1 c. shredded Swiss cheese
Paprika

Cook artichokes according to package directions, drain well. Melt butter in 3 quart pan over medium heat and cook onion until limp. Stir in flour and cook until bubbly. Gradually add milk and cook, stirring until thickened. Remove from heat; mix in the oregano, eggs, artichokes, salt and pepper to taste. Spoon into a shallow 1 1/2 quart casserole and sprinkle with cheese and paprika. Cover and chill if made ahead. Bake, uncovered, in a 325 degree oven for 20 minutes (35 minutes if chilled) or until bubbly. Serves 6 to 8.
