FRESH APPLE CAKE | |
4 c. chopped Winesap apples 2 c. sugar 2 eggs (whites), separated 1 c. oil 2 1/2 c. all-purpose flour 2 tsp. baking soda 1 tsp. salt 1 c. pecans, chopped fine 1 tsp. cinnamon Let apples and sugar stand in a mixing bowl while you beat 2 egg whites until stiff. Then add yolks and stir. Add oil to egg mixture. Beat well and let stand. Mix together flour, baking soda, salt, pecans and cinnamon. Pour egg mixture over apples. Stir, then add dry ingredients. Stir with a spoon. Pour into a greased and floured tube pan. Bake at 350°F for 1 hour. Makes a dark cake with brown crust. |
