CHEESE TARTS 
18 vanilla wafers
2 (9 oz.) pkgs. cream cheese at room temp.
1/2 c. sugar
1/2 tsp. vanilla
2 eggs, beaten
1 can pie filling (cherry, blueberry or pineapple, etc.)
18 muffin cups

Preheat oven to 350 degrees. Place a vanilla wafer in each muffin cup and place in muffin tins.

In a large bowl combine cream cheese, sugar, beaten eggs and vanilla. Beat until creamy. Pour into muffin cups 2/3 full. Bake 14 to 16 minutes or until cream cheese filling begins to crack on top. DO NOT let filling get brown. Cool on cake rack. Top with pie filling.
