CHEESECAKE TART 
4 oz. oatmeal cookies = (6 or 8 three inch cookies)
2 tbsp. melted butter
2 c. part skim Ricotta or low fat cottage cheese
2 egg whites
1 tsp. vanilla extract
1/4 tsp. almond extract
3 tbsp. light honey
Fresh fruit such as tangerine, kiwi, berries to garnish

Lightly oil 9 inch tart pan. In blender process cookies and butter until the mixture is crumbly. Press mixture into bottom and sides of tart pan then refrigerate.

Preheat oven to 325 degrees F. Blend cheese, egg whites, vanilla, almond extract and honey in blender until smooth. Spoon into tart shell and bake until firm, about 30 minutes. Chill and garnish with fruit. 8 servings.
