CREAM CHEESE TARTS 
2 (8 oz.) pkg. cream cheese (softened)
1 c. sugar
2 eggs
1 tsp. vanilla
12 vanilla wafers
12 cupcake holders to be placed in muffin pan
Pie filling, your choice

First: Place one vanilla wafer into each cupcake holder which is in the muffin pan. Filling: Beat cream cheese at medium speed with electric mixer until light and fluffy. Gradually add sugar, mixing well. Add eggs one at a time, beating well after each addition. Stir in vanilla. Spoon this mixture over the vanilla wafers filling the cup full. Bake at 350 degrees for 20 minutes. Leave in pan and chill overnight. Top with pie filling. Tarts will "sink" a little as they cool, creating a good place to hold the pie filling of your choice. Makes 12 servings.
