ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
2 c. grated zucchini
1 tsp. vanilla
3 c. flour
1 tbsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda

Beat eggs; add oil and sugar; beat. Add zucchini and vanilla. Blend thoroughly. Add dry ingredients, blend thoroughly. Pour into 2 greased loaf pans. Bake at 325 degrees for 55 minutes.
