FRIED APPLES 
2 lbs. cooking apples, cored and sliced
1 c. dark brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. lemon juice
1/4 c. cornstarch
1/4 c. butter
1/2 c. apple cider or water

Melt butter in a skillet. Add the sliced apples and brown sugar. Add the spices, lemon juice, and cornstarch in the order given. Mix well. Slowly add cider or water. Simmer over low heat 30 to 40 minutes. Stir occasionally. Serve with ham, etc.
