FRIED APPLES 
2 qts. sm. tart apples, unpeeled
1 c. light brown sugar
1 tsp. ground cinnamon
3 tbsp. butter

Cut each apple into 6 wedges; core. Place in 10 inch skillet. Sprinkle with brown sugar and cinnamon; dot with butter. Cover with lid or foil.

Place skillet on cold burner; turn heat to low. Cook, stirring only occasionally, until tender, about 45 minutes. Uncover and cook 3 to 5 minutes longer. Serve warm. Makes 8 servings.
