FLOUNDER FLORENTINE 
1 pkg. frozen chopped spinach, thawed and well drained
2 tbsp. chopped onion
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. seasoned salt
2 tbsp. salad oil
1 lb. flounder filets
1/2 c. med. white sauce
2 tbsp. dry vermouth
1/2 c. grated Cheddar cheese

Place spinach in well greased shallow casserole. Add onion, seasonings and oil. Arrange fish filets in single layer over spinach. Add vermouth to white sauce. Pour over fish. Sprinkle with cheese. Bake at 350 degrees for 45 minutes. Serves 2-3.
