SAUSAGE SAUCE PIQUANT 
1 lb. smoked sausage, sliced
2 tbsp. oil
2 tbsp. flour
1 med. onion, chopped
1/2 green pepper, chopped
16 oz. can tomatoes
2 c. water
Salt & pepper
Rice

Brown sausage. Drain well. In a Dutch oven, combine oil and flour and stir constantly over low heat until you have a deep rich colored roux. Add onions and green pepper and saute a few minutes, until tender. Add sausage, tomatoes, water, salt and pepper. Cover and simmer at least 1 hour. Serve over rice. Serves 4 to 6.
