PARKERHOUSE ROLLS 
3 tbsp. dry yeast
8 tbsp. sugar
2 tsp. salt
1/2 c. oil or melted shortening
3 c. warm water
3/4 c. dry milk
4 eggs
7-8 c. flour

Soften yeast in warm milk with sugar, oil, salt and eggs. Add flour, stir until able to knead. Butter hands and knead until smooth. Oil top, let raise until double. Roll out and cut in rounds. Butter each half and double over. Raise, bake at 450 degrees for 15 to 18 minutes. It may take a little less or more flour depending on the flour and weather conditions. Makes 5 to 6 dozen. (P.S. If you don't add the oil until you knead, the rolls will be more tender.)
