CHUNKY PECAN MUFFINS 
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. brown sugar, firmly packed
1 egg, slightly beaten
1/3 c. milk
1/4 c. maple syrup
1/2 c. butter, melted
1 c. chopped pecans
1 tsp. vanilla

TOPPING:

1/4 c. sugar
1/4 tsp. cinnamon
1/4 c. butter, melted

Combine first 5 ingredients in a bowl; make a well in the center. Combine egg, milk, syrup and 1/2 cup butter. Add to dry ingredients, stirring just until moistened. Stir in pecans and vanilla. Fill paper lined muffin pans 2/3 full. Bake at 400 degrees for 15-20 minutes.
