SPINACH BALLS 
2 (10 oz.) chopped frozen spinach, thawed & drained
2 c. seasoned herb stuffing mix
1 c. Parmesan cheese
6 eggs, well beaten
3/4 c. soft butter
Sprinkle of salt & pepper

Mix all ingredients together. Shape into small 1 inch or 1 1/2 inch balls. Bake at 350 degrees for 20-25 minutes or until sizzling and browned. Serve hot.

Can be frozen for future use as makes 75 to 100 balls.
