MASHED POTATO CASSEROLE 
Boil enough peeled potatoes to make approximately 6 to 8 cups mashed.

Add to the mashed potatoes the following and beat all together: 1 egg 3/4 c. sour cream (or sour half and half) Salt & pepper to taste

Stir in 1/4 cup finely chopped onion. Place in a greased 2 quart casserole. Sprinkle with paprika if desired for color.

This may now be covered and refrigerated until ready to use. Keeps several days.

Bake, uncovered for 45 minutes to an hour at 350 degrees, until lightly browned.
