EGG AND SHRIMP CASSEROLE 
6 hard cooked eggs
2 tbsp. mayonnaise
1/8 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper
2 lbs. cooked shrimp
1 c. chopped mushrooms
1 c. cooked peas
3 tbsp. flour
3 tbsp. butter
1 3/4 c. milk
1/2 c. grated cheese
1 tsp. grated onion

Cut eggs in half and remove yolk. Mash the yolk and mix with mayonnaise, mustard, salt and pepper. Refill the whites with the mixture and place in a buttered casserole. Cover with shrimp, mushrooms and peas.

In a saucepan melt butter, blend in flour and add milk slowly. Cook until thick, stirring constantly. Add cheese and onion and pour over the casserole. Bake at 350 degrees for 25 minutes.
