PARSLEY RED POTATOES 
1 lb. sm. red potatoes
1 tbsp. olive oil
1 tsp. butter
1 tbsp. chopped fresh parsley
Salt and pepper to taste

Scrub potatoes and peel off strip around center of each potato. In 2-quart microwavable dish, place potatoes and 1/2-inch water. Cover with lid of dish or plastic wrap, turning back a corner to vent.

Microwave on HIGH 5 minutes. Rotate dish or turn potatoes; recover and cook 8 minutes longer or until potatoes are fork-tender. Drain potatoes; add oil, butter, parsley, salt and pepper to taste. Transfer to serving bowl. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
