HALIBUT STEW 
Cut potatoes and carrots into chunks. Dice onions, add to above and cook until almost tender. Drain all but 1 1/2 cups liquid.

Add 1 cup white cooking wine--should not quite cover vegetables.

Add a lot of halibut cut into 1 1/2 inch cubes. Cook until fish turns white.

Blend:

2/3 cube butter
Couple cloves garlic
Enough flour to soak up butter

Add 1 1/2 cups milk and stir until smooth. Add to chowder and cook until thickened. Add green peas--dill weed to taste (very important), salt and pepper. (May need more liquid if too thick.)
