CARROT BARS 
1 1/4 c. flour
1 tsp. cinnamon
2 eggs
3/4 c. vegetable oil
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1 c. brown sugar
2 c. shredded carrots
1/2 c. chopped nuts

Combine all ingredients, except nuts, in a bowl. Mix together. Add the nuts and pour into a greased 9 x 13 inch pan. Bake at 350 degrees for 30 minutes.

FROSTING:

1 1/2 c. powdered sugar
1 (3 oz.) pkg. cream cheese
1/4 c. butter
1 tsp. vanilla

Combine all ingredients and beat until creamy. Spread on cooled bars. Top with nuts if desired.
