WARM SHRIMP SALAD 
2 cloves garlic
3 green onions, chopped
2 tbsp. fresh or 2 tsp. dried tarragon
2 tbsp. chopped fresh ginger or 1/2 tsp. dry ginger
1/4 c. lime or lemon juice
3 tbsp. vinegar
1 tbsp. soy sauce
1/2 c. oil
1/2 tbsp. sesame oil
Fresh pepper to taste

SALAD INGREDIENTS:

12 oz. cooked shrimp
2 heads of salad greens, bite-size pieces

Combine dressing ingredients in a blender. Marinate shrimp in 2 tablespoons of the dressing for 30 minutes, reserve the rest. Saute the shrimp in the dressing, marinade about 2 minutes or warm up in the microwave.

Arrange salad greens, scatter the hot shrimp on top. Pour on remaining dressing and toss and serve. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
