APPLESAUCE MEAT BALLS 
2 lbs. ground beef
1 c. bread or cracker crumbs
2 eggs
1 tsp. salt
1/4 tsp. pepper

FOR SAUCE:

2 1/4 c. tomato juice or V-8 (can be diluted with water)
1 green pepper, diced fine
1 onion, diced fine
1 carrot, diced fine
1 stalk celery, diced fine

Mix meat, crumbs, eggs, salt and pepper together and form into balls. Brown. Combine ingredients for sauce and pour over meat balls. Bake at 350 degrees for 1 1/2 hours. Makes 20 to 24 balls.

TO MICROWAVE: Cook meatballs on High for 3 minutes. Drain juice. Add sauce and microwave on High 30 minutes, turning occasionally.

Since microwave ovens vary in power, you may need to adjust your cooking time.
