CARROT CURRANT OATMEAL 
2 med. carrots, shredded
1/2 tsp. salt
1/2 c. raisins or currants
2/3 c. oat bran
1 1/3 c. rolled oats
1/2 tsp. cinnamon

In small sauce pan, combine carrots with salt and 4 cups water. Bring to a boil and boil over moderately high heat. Reduce heat to moderately low and add currants or raisins and simmer until carrots are soft and currants/raisins are plumped, about 3 minutes. Stir in oat bran, rolled oats and cinnamon. Cook, stirring constantly, until thickened, about 5 minutes. Serve at once. My kids were not sure about this one but once tasted they loved it! and ask for it over and over.
