OATMEAL CARROT BARS 
1 c. packed brown sugar
1/3 c. shortening
1 egg
1/2 tsp. vanilla
3/4 c. finely shredded carrot
1 c. whole wheat flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. quick cooked rolled oats
1/4 c. wheat germ
1/2 c. raisins

In small mixer bowl cream together sugar, shortening, egg and vanilla until light and fluffy. Add carrot, mix well. Thoroughly stir together flour, baking powder and salt. Stir in oats and wheat germ. Stir dry ingredients into creamed mixture, fold in raisins. Spread into greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30 to 35 minutes. Cool in pan on wire rack. Cut into bars or squares.
