CAJUN POTATOES 
3 to 4 potatoes, diced
1 onion, diced
3 tbsp. oil
2 minced garlic cloves
Cajun spice to taste
Pepper to taste
Salt to taste
1 can corn

Heat oil in wok. Add potatoes and cook for 20 minutes on medium heat - stir frequently. Add onions and cook until transparent. Add can of corn with spices to taste. Test potatoes as meal cooks covered. Serve with fried eggs, salsa and English muffins. Great just before cross country skiing.
